Baking is a process of cooking by dry heat, especially in some kind of oven/OTG.  It is probably the oldest cooking method. Bakery products, which include bread, cookies, pies, pastries and muffins are usually prepared from flour or meal derived from some form of grain.  Some of the recipes from my own not from Google. But you can still search more recipes from Google search.

Principles of Baking:

There are 6 main principles of baking.

  • Wet ingredients
  • Dry ingredients
  • Leavening agents
  • Flavoring
  • Heat
  • Different mixing methods

When we combined it correctly, it creates a delicious and perfectly baked dish every time.

Basic rules of Baking/Tips for Beginners:

Read your recipe mannuals once if you are a beginner, before you even start adding things to your mixer.

  • Do the research
  • Avoid distractions
  • Check your ingredients
  • Check your utensils
  • Follow the instructions
  • Preheat the oven
  • Make accurate measurements
  • Don’t rush baking
  • Weight your ingredients
  • Room temperature is a key
  • Never mix a hot ingredient into a batter or dough
  • Your bakeware matters

Recipe 1: Wheat Banana Cake (1/2 kg)

Ingredients:

Wheat flour – 140 grams.

Sugar – 140 grams.

Baking powder – 1 Tbsp

Eggs – 4 (If you wanna try eggless cake instead of eggs add milk maid/Condensed milk)

Vanilla Essence – 1 Tbsp

Milk Essence – 1/8 Tbsp

Salt – a Pinch

Nuts – Handful of mixed nuts

Oil – 60 ml

Milk – 10 ml (Optional)

Elaichi – 1 nos/essence 2 drops

Banana – Medium 2 nos/Small 3 nos

Procedure:

In a bowl add eggs/Milk maid, essence, sugar (3 portions) and beat well.  Then add oil and mix gently and finely crushed bananas. Sieve Wheat flour and baking powder without any lumps and add it to egg batter and mix gently with cut and fold method. Do it until you get a ribbon fold consistency. Transfer to 6 or 7 inch round/square tin and bake it at 180 degree celcius for 25 min to 30 min in a preheated own/OTG/Pressure cooker.  Once it’s done insert the thooth pic and check wheather it is sticky or not.  Same way we can make different types of cakes like chocolate cakes, flavour cakes and banana cakes.

Recipe 2: Bajra Tea Cake (1/2 Kg)

Ingredients:

Wheat flour – 90 gms

Bajra flour – 50 gms

Sugar/Brown sugar – 140 gms (if you like more sweetness then add 10 gms extra which is optional)

Baking powder  – 1 Tbsp.

Eggs – 4 (without egg recipe add condensed milk)

Vanilla Essence – 1 Tbsp

Milk Essence – 1/8 Tbsp

Salt – a pinch

Nuts – mixed nuts/tooti frooti or dates mixed dry fruits

Oil – 60 ml

Milk – 10ml

Procedure:

In a bowl add eggs/Milk maid, essence, sugar (3 portions) and beat well.  Then add oil and mix gently.  Sieve Wheat and Bajra flour and baking powder without any lumps and add it to egg batter and mix gently with cut and fold method. Recipe 3: Ragi Chocolate Cake

Ingredients:

Wheat flour – 90 gms

Ragi flour – 25 gms

Coco powder – 25 gms

Sugar/Brown Sugar – 140 gms (if you want more sweetness add 10 gm extra sugal which is optional)

Baking powder  – 1 Tbsp.

Eggs – 4 (without egg recipe add condensed milk)

Vanilla Essence – 1 Tbsp

Milk Essence – 1/8 Tbsp

Salt – a pinch

Nuts – mixed nuts/tooti frooti or dates mixed dry fruits

Oil – 60 ml

Milk – 10ml

Recipe 4: Multigrain Tea Cake (1/2 kg)

Ingredients:

Multi-grain flour – 140 gms

Sugar/Brown sugar – 140 gms (if you like more sweetness then add 10 gms extra which is optional)

Baking powder  – 1 Tbsp.

Eggs – 4 (without egg recipe add condensed milk)

Vanilla Essence – 1 Tbsp

Milk Essence – 1/8 Tbsp

Salt – a pinch

Nuts – mixed nuts/tooti frooti or dates mixed dry fruits

Oil – 60 ml

Milk – 10ml
